A Handbook of Ethnography  http://www.comp.lancs.ac.uk/sociology/VSOC/Handbook/Handbook.html  a handbook of ethnomethodology (also known as participant observation).  Very nice overview and intro to the methods, except that on their 'practical matters' page, they say not to read any methods books before doing ethno research.  What I think they really mean is don't get so over-worried about following all the research 'rules' that you don't do any research.

A Synthesis of Ethnographic Research http://www-rcf.usc.edu/~genzuk/Ethnographic_Research.html   This is an overview.
